Authentic American Barbecue, more than backyard grilling

The term 'barbecue' has grown to have several meanings in
America. It is commonly used to denote a gathering of people to eat
food cooked over fire. When most people think of "barbecue" it is
something they cook over a grill.
The members of the California Barbecue Association like to
think of "Barbecue" as a lot more than just a get-together around a
gas-fueled backyard grill. To us, "Barbecue" denotes a specific way of
cooking meat. In the photo below, you see an example of authentic American barbecue--pork butts that have finished cooking in a
wood-fired off-set smoker for 12 hours. There is nothing like the
taste and smell of this way of cooking meat.

What is California barbecue? That's a
good question. Contrary to many barbecue
aficionados in other parts of the US, we Californians do not smoke
tofu. California barbecue is most heavily influenced by and similar to
Kansas City-style
barbecue. Something fairly unique to California barbecue is smoked
beef tri-tip. In addition to
smoking chicken, pork and beef, Californians also like to smoke various kinds of
