Meat is the heart of the matter in barbecue

Many types and cuts of meat are suited for traditional barbecue.  These pages describe some of the animals and cuts of meat that are most favored in barbecue.  

In many parts of the United States -- primarily the Carolinas -- barbecue means only one thing -- pork.

In Texas, of course, barbecue means beef -- from brisket to steaks and the many other cuts of beef that take on a special character when cooked in the barbecue method.

Traditional barbecue is cooked with other animals, chicken and turkey, lamb, wild game and fish.
