Memphis barbecue sauce for chicken

This is a Memphis-style barbecue sauce for chicken.

Ingredients

  • 2 cups ketchup
  • 1/2 cup prepared mustard
  • 1/2 cup brown sugar, packed
  • 1/4 cup cider vinegar
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons chili powder
  • 1 tablespoon fine grind black pepper
  • 1 tablespoon granulated onion
  • 2 teaspoon granulated garlic
  • 2 teaspoons celery salt
  • 2 teaspoons liquid smoke (optional)
  • 1/2 teaspoon cayenne (optional)
  • 2 tablespoons Canola oil

Preparation

In a saucepan, combine all the ingredients except the oil.  Stir to dissolve the ingredients and bring it to a boil.  As soon as it reaches a low boil, reduce the heat and simmer for 25 minutes, stirring occasionally.  Then blend in the oil with a wire whisk, and simmer an additional 5 minutes.

Makes about 3 cups.
