Georgia Peach Barbecue Sauce For Chicken

This is a peach barbecue sauce for chicken.

Ingredients

  • 2 cups ketchup
  • 1 cup peach preserves, pureed
  • 1/2 cup brown sugar, packed
  • 1/3 cup white vinegar
  • 2 tablespoons clover honey
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Peachtree Schnapps (optional)
  • 1 tablespoon onion salt
  • 2 teaspoons black pepper
  • 1 teaspoon granulated garlic
  • 1 teaspoon ground ginger
  • 1/4-teaspoon ground clove
  • 1/4 teaspoon ground mace
  • 1/2 stick butter, cubed and well chilled

Preparation

In a saucepan, combine the brown sugar, onion salt, pepper, garlic, ginger, clove, and mace. 

Dissolve the spices with the vinegar, Worcestershire sauce and schnapps. 

Stir in the rest of the ingredients, except the butter. Bring to a boil. 

As soon as it reaches a low boil, reduce the heat and simmer for 30 minutes. 

With a wire whisk, blend in the butter, until incorporated, and serve

Makes about a quart.
