Barbecue rubs, mops, bastes and sauces 

It is not only the smoke and meat that give barbecue it great taste.  When you barbecue, the first step is to give the meat a coating with a blend of spices called a 'rub'.  While the meat is cooking, it can be given a mop or a baste to add flavor and moisture.  Just before the meat is finished cooking, it can be glazed.  When the meat is finished and ready to serve, it can be coated or accompanied by a sauce. In some parts of the country, like Memphis, TN, the finished meat is given another sprinkling of the rub just before it is served.
